http://www.balfourcastle.co.uk/ is "a", or as some would say "the" Balfour Castle, but it's located on Isle of Shapinsay, Orkneys, Scotland. It's actually a hotel/B&B type place now. Are you positive this is an Irish castle and not Scottish? There IS, IIRC (I dont have my binder 'o research on hand; it's on loan :/), a castle or some type of fortified structure in Ireland called Balfour Castle, but I'm not 100% positive (sorry).

Denmylne Tower near Lindores, Fife, Ireland was once a Balfour owned castle/tower house as well.

Bluewater

Balfour Castle in Orkney is not technically a castle, but a castellated mansion with no fortified features. It was built only in 1847 by the famed architect David Bryce for David Balfour.
I also cannot find reference to a Balfour Castle in Ireland, though I agree that the name is Scots. It originated in the barony of Balfour in Fife, where stands the ruin of a mansion, Balfour House, which in turn stands upon the vaulted basement of a once strong tower house.The Balfour family owned this estate until 1360, and at one time or another owned the following Scottish castles; Balgonie, Bandon, Burleigh, Collairnie, Denmylne, Fernie, Isle of May, Kirkton, Monimail, Mountquhanie, Noltland, Pilrig, Pitcullo, Randerston, Strathmiglo, Whittinghame, and Wormiston.
Lindores in the 'Ancient Kingdom of Fife' is in fact also in Scotland.

Sorry this is so late;
Castle Balfour Co Fermanagh appears in Mike Salters Castles and stronghouses of Ireland.
It is a stronghouse of 1618 has a wing facing a low cliff on the west, and originally had a bawn.
It was built by Sir James Balfour, refortified by Ludlow in 1652, and burnt in 1689. It was restored and inhabited until c.1820.
