Any help will be greatly appreciated on the below:

- Kevin's castle in County Cork
- John and Mary O'Keeffe (or O'Keefe)
- Maiden name Mary Thornhill
- Married in Mitchells Town, County Cork
- Mary's family lived at Kevins' Castle

Up to now I can find no listing of a 'Kevin's Castle' in Ireland.
If it is was built after, say. the 1700's it would not be listed in the normal sources.
Will have another check later.

I actually turned it round and looked for CastleKevin, of which there was two. One is over near the Wicklow mountains, and has not really existed for over 300-years.
The second is in County Cork, and all the info I can get on that up to now is;
Stone on a 19th century house on site has a date stone of 1613, and initials T.W.I Forfeited Roche castle given to Thornhill in the 1650's (R620325).
I have not checked that map reference out.
The other named you gave brings up nothing up to now.
One of the problems is that a castle/tower would amalgamated into a later structure, leaving very little behind. Though the newer house may still be called 'castle'.

Acording to the Archaeological Survey of Ireland - Cork Vol 4 (North Cork) - two references.
Page 510 - details Castlekevin or Castle Kevin - site of a castle now occupied by a 19th-century country house, with the stone referred to by Peter inserted into the later house.
Page 648 - details the 19th-century country house, which dates from c.1830

Also referred to in "The Castles of County Cork" by James N Healy - page 393-5.
