What were the rules for dueling in medieval times? Did they even have them back then?
I'm thinking of putting one in a story I'm writing, so I need to know.

This is not my topic at all, but I thought the concept of the word 'duel' did not come in until much later ?

This is a site where you should find the information you need. Also, there are some pieces writen by people who fought in the middle ages, but they refere to duels as setting an argument or suchlike. The first code of dueling appeared in the Renaissance.
