I'm sure I read something somewhere about 'gaol fever'. Has anybody heard of it? If it existed, what were its symptoms? Merci beaucoup!

No.
But if you are mentioning it in relation with medieval times?
I would have thought places of those times would not be the healthyist to be locked up in. So the saying could arise from then. Go in more or less healthy, and come out (if lucky!) stark raving bonkers.

"Gaol fever" was typhus, a disease caused by bacteria spreading through the bites of lice and fleas. The infection causes headache, fever and a rash of red spots. It arrived in Europe in the 15th century, and there was a fearful epidemic in 1557-59.I hope that this is helpful to you.

What made you think that you were going mad?
Glad to be of assistance.
