Would convents/nunneries have had 'lay brothers' or 'lay sisters' or neither? I know they had male priests.

The convents had male priests because women weren't allowed to listen to confesions or perform the liturgy.
Lay sisters yes, lay brothers...no, I don't think so.
lay sister : female member of a religious order who is not bound to the recitation of the divine office and is occupied in manual work, generally adult converts to the monastic life http://medievalwriting.50megs.com/churchglossary/glossaryi.htm
But I can tell you about some convents in nowadays Romania. In remote rural areas there are no lay sisters, everybody gets to do the hard work in turns.
