I have found the bast material to work with in creating replica fortifications and stone walls at 1" = 10' (1:10) scale is close cell styrofoam. Closed cell has more weight and density than regular packing styrofoam and is stackable. The pieces can be cut easily with a box cutter and carved to shape then sprayed with an appropriate paint color. The pieces can be anchored in place with toothpicks or permanently glued together. I prefer toothpicks so I can alter my design later if I find a flaw. The important thing to remember is you must have a plan beforehand. Knowing the real world size of what you are designing will allow you to fit it properly into scale without having to force the model. The keep itself should be built one layer at a time on a base board of some type, I use cardboard. Then they can be stacked to produce the final structure. Closed cell foam is available in most department stores in the sporting goods section (they are used as camping pads). The other materials are common enough. To accent your final design I rely on my old model railroad experience. I use real earth packed on the mounting board around the bases of the walls (unevenly to emulate real settling and erosion), combined with some small limestone outcrops (stones protruding form the surface of the earth). Onto this you can place trees (actually the tops of small woody weed plants that look just like trees in this scale). Dress up a road to the gatehouse and there you are.I hope this has been helpful.
