what did the people of that time do during an attack on their castle? What did the king/queen do? or the nobles? what did the srevants do? and the knights?

As for the individuals, they all helped to defend the castle, and the importance of what each did was reflected by their rank.

this question is really unanswerable,as we depend mainly on clerical chronicals written by monks and priests who had little interest in practical details.

Philp's mention of Malta in another posting brought this to mind, from an account of 'The Great Siege'.
'..the truth is that his efforts were not completely in vain. Senglea had been torn to rubble, and so was Birgu. The battle has been taken to the civilian population. Men ,women and children who had until then endured the siege in silence and prayer were made to realise that the end was near and they just couldn't be expected to wait until death. Until then their sense of defiance had made them hope.....but soon there was an exodous of men, women and children to join the members of the garrison on the ramparts of the fort. There were breaches to be repaired, barriers to be built in the streets, food and ammunition to be carried, and wounded to be tended to. Every available Maltese in Birgu and Senglea had overnight become a part of the garrison'
