http://www.castlesontheweb.com/quest/Forum9/HTML/000234.html for why castles were built,
Who lived in them? well, a rich lord and his lady, or a king, their servants, usually a small "army" bakers, blacksmith, and more people who carries out a specific job, but how many kinds of people really depends on the size of the castle.
for the designs: http://www.castlewales.com/beaumar1.html , for the layout of a castle wich was found in the 13/14 hundreds, called a concentric castle and:
O, I was going to give you philips site with millions of layouts, but the site is no longer, maybe philip himself knows more.

Other thing I have to say:
books can provide a lot of info, try them,
start your project a little earlier, starting a few days before it should be ready ain't smart (I don't know how much time you were granted, my excuse when I was wrong.)
Donư be lazy and search for things yourself too! on this site for instance.

Good luck.
