A motte and bailey castle was not always constructed from timber. Although originally built from timber, they were later rebuilt in stone for additional security. See http://www.castlesontheweb.com/archive/files/British_Castles/Berkhampstead-3-307b.jpg

Also see http://www.castlesontheweb.com/archive/files/Castle_Floorplans/Totnes.gif which shows the Keep on the summit of the motte, dominating the surrounding bailey.
