In the case of the private chambers of the lord and lady of the castle, there would have been a bed and some chests. Almost everything was kept in chests and chairs were not common, so the bed was used for sitting. Furniture such as cupboards, vanity tables, chests of drawers and wardrobes were not used in the middle ages as far as I can tell. It's most likely that any table and chairs were kept in the great hall for use in writing when conducting business.
