I suppose anyone replying to your question would pick a favourite lesser known castle of their own. So, I must go for two Welsh (never mind that English rubbish) minor sites here in North Wales; Ewloe Caergwrle
Both have nice little histories, and, are not over complex to model. You get bonus points for pronouncing the second corectly !

The only problem with researching these little known Welsh (or other) castles is (possibly) the lack of information available. My advice would be to pick a castle that has some history and a good guide book. The CADW guide books are really good and usually have reconstruction diagrams in them. Something like Criccieth (North Wales) would be good - its unlikely that many people would pick it, it has a design that would be simple to model and the CADW guidebook gives plenty of information.
