I'm not sure of the arrangement at Farleigh Hungerford, though the discussion linked below will give you a few ideas on the topic;

The most common type that I have seen seems to be of the type with holes in the wall. To one side of the door there is a deep hole in the wall into which the bar can slide when not in use. On the other side there is a shallower hole to take the other end of the bar when the door is "locked". I have seen these holes in very old fortifications also, so it's been in use for a long time.
I have also seen locks where the bar is lifted onto two projecting stones(one each side of the door), slotting down into recesses in the stone to hold the bar in place.
There is also a method where the bar is leaned against the door at a 45 degree angle, one end held firm in a depression in the stone floor or wall, the other resting against a stop or held onto the door by an iron hook.
